5 egg yolks
5 whole eggs
1/2 cup plus 2 tablespoons granulated sugar
5 egg whites
1/4 cup granulated sugar
1/2 cup flour
1/2 cup plus 2 tablespoons cocoa powder
1 ounce water
1/4 cup granulated sugar
2 whole eggs
1 egg yolk
3 ounces semi sweet chocolate
1 ounce unsalted butter
7 ounces whipped cream
2 ounces milk
1 vanilla bean
2 tablespoons granulated sugar
1 egg yolk
3 1/2 ounces white chocolate
6 ounces whipped cream

To make cake, whisk in a mixer 5 egg yolks, 5 whole eggs and 1/2 cup plus 2 tablespoons sugar together until thick. Set aside and whisk 5 egg whites and 1/4 cup sugar. Fold into yolk mixture. Add flour and cocoa powder. Put in cake pans and bake at 400 degrees F for 10 minutes. To make chocolate mousse, melt chocolate and butter together. Whisk in a mixer 2 whole eggs and 1 egg yolk.

Cook water and 1/4 cup sugar until sugar dissolves. Pour into mixer with eggs. Add in chocolate, then whipped cream. Mix well.

To make white chocolate cream, boil milk with sliced vanilla bean. Mix 2 tablespoons sugar and 1 egg yolk. Add to melted white chocolate. Add milk and vanilla bean and combine with 6 ounce whipped cream.

To assemble, use an 8-inch cake ring as mold to cut the cake into round pieces. Cover first layer of cake with chocolate mousse. Then add another layer of cake and cover with white chocolate cream. Add a third layer of cake and cover with chocolate mousse. Smooth off the top and put in freezer for at least 2 hours.

To make the glaze, boil 9 ounces cream with 1 tablespoon honey. Pour over 7 ounces semisweet chocolate and stir until chocolate melts. Pour over the cake.

Serves 8.

Again, this was shown on our local channel and looked soooo gooooood! Not T&T but thought this was a keeper worth passing on!
