Instructions:

Eggplant Casserole Supreme

1 large eggplant, chopped into small pieces
1 large onion, chopped
2 cloves garlic, minced
2 tablespoons margarine or butter
2 pounds ground beef
1 box rotini noodles
1 large jar spaghetti sauce
1/4 cup Parmesan cheese
1/4 cup mozzarella cheese

Brown ground meat. Drain grease and set aside.
