Instructions:

Whipped Fruit Filling

As always, use caution when using raw egg whites. Use organic when possible.

1 1/2 cups pared, grated apple, peach or mashed berries
1 1/2 cups granulated sugar
2 egg whites
Zest of 1 lemon

Mix all together. Beat until very stiff. Use between layers. Can also be used on top of cake.
