Cheese Ramekin Lorraine

Instructions:

Serves 6
Preparation time: 15 minutes
Baking time: 30 to 35 minutes

1 1/2 cups milk
1/3 cup flour beaten with 1/2 cup cold milk

1 1/3 cups Gruyere or other Swiss cheese, grated
4 eggs, separated
1/4 cup smoked ham, diced
1/4 cup bacon, cooked crisp and crumbled
1 teaspoon Kosher salt
1/8 teaspoon ground white pepper
1/4 cup cottage cheese, sieved
1/4 cup heavy cream
2 teaspoons chives, chopped

Set oven at 325°.

In a saucepan, bring the milk to the boiling point. Beating well, blend the flour with cold milk and whisk into the slightly boiling milk. Cook overmoderate heat for 3 minutes minutes. Remove mixture from heat, blend in the grated cheese and season with salt and pepper.

Beat the egg yolks and mix into the now thickened milk, add the ham and bacon then beat the egg whites until stiff and fold into the mitxure along with the chives.

Whip the sieved cottage cheese with the heavy cream. Transfer the mixture to a buttered 2-quart ovenproof soufflé dish and cover with the cottage cheese mixture.

Bake custard until set, about 30 to 35 minutes. Serve immediately.
