Instructions:

Serves 8
Preparation time: 15 minutes

Ingredients:

1 20-ounce can chick-peas
1 teaspoon garlic, pressed
2 tablespoons lemon juice
1/4 tsp. ground cumin
1 teaspoon salt
1/2 cup tahini (sesame-seed paste)
several dashes cayenne pepper
chopped fresh parsley for garnish


Drain the chick-peas and reserve the liquid. Purée the chick-peas in a food mill or blender, using as much of the liquid as needed to make a smooth paste.

In a bowl, combine the chick-pea purée and the tahini. Blend thoroughly with pressed garlic, lemon juice, cumin and cayenne pepper.

Transfer humous to a serving dish and garnish with chopped parsley. Serve at room temperature as a dip or a spread with pita bread and raw vegetables.
