Amount Measure Ingredient

6 each hard cooked eggs
1/2 teaspoon salt
1/2 teaspoon dry mustard
2 teaspoons chives, chopped
2 tablespoons mayonnaise
24 Ritz crackers
1/4 lb. butter, softened
paprika for sprinkling and parsley leaves


Quarter the hard cooked eggs. Carefully remove yolks and place in a small bowl. Place egg whites flat, on buttered crackers. Mash yolks with a fork. Add and mix in remaining ingredients. Spoon yolk mixture into centers of whites. Garnish with a sprinkle of paprika and a tiny sprig of parsley. Makes 24
