Instructions:

Ingredients:

7 cups all-purpose flour, level
5 cups finely chopped pecans
2 teaspoon salt
3 cups granulated sugar
1.5 lb. butter, softened
3 tbsp. vanilla extract

Preheat oven to 350

Combine flour, pecans, and salt, stirring well with a whisk.
Place granulated sugar and butter in a mixing bowl; beat with a mixer at medium speed until fluffy (about 2 minutes). Beat in vanilla extract. Beating at low speed, gradually add flour mixture, and mix just until combined, if crumbly, add melted butter to bring it together.

Shape dough into block and refrigerate overnight. Roll and cut cookies #9 cutter 3.8 inch thick on light flour surface.

Bake at 325 for 20 minutes or until lightly browned.

It is important for your butter to be soft when you prepare the dough so it will hold together nicely when you roll it.
