Chilled Cucumber Soup with Dill

Instructions:

Preparation time: about 1 hour and 30 minutes

3 each English cucumbers, washed and cut in 1 inch cubes
3 cup cold chicken broth
.25 cup fresh dill, coarsely chopped
.25 cup fine chopped shallots, by hand
.5 tsp. ground white pepper
1 tbsp. salt
.25 tsp. nutmeg
+ may need a small amount of water
2 cups sour cream
2 cups heavy cream
garnish: fresh dill sprigs, sour cream, fine diced cucumber and choppped chives

Place all ingredients, except the sour cream and heavy cream, in a food processor or in a blender, then blend until smooth and no lumps are visible.

Transfer to a stainless steel bowl set on top of a bowl filled with ice. Whisk in the sour cream and then the heavy cream.

Taste for seasonings and add more salt and pepper if you like. Place in a container covered with plastic wrap and refrigerate.

Note : Serve in chilled soup bowl and garnish with fresh dill sprigs, sour cream and fine diced cucumber and chives.

This is a delicate flavored soup and makes a great appetizer on a hot day. It's very refreshing!
