Apple Mousse

Instructions:

Yield: 4 servings

4 lg Cooking apples
2/3 cup Sugar
1 pinch salt
2 tbsp Lemon juice
1 1/3 cup Water
1/4 tsp cinnamon
2 tsp Cornstarch
1/4 tsp. vanilla extract

Peel & core the apples. Slice them reasonably thinly & place in a large saucepan. Add the sugar & water & cook until the apples are very soft. When cooked, sprinkle in the cornstarch, stirring & beating to ensure that there are no lumps. Stir in the lemon juice and bring to a boil so the cornstarch thickens the juices. Set aside to cool.

When cool, place in a blender & blend until smooth with the vanilla. Pour into 4 small dessert dishes & chill until ready to serve. Serve with whipped cream and butter cookies.
