Linguine with Mushrooms

Instructions:

Yield: 4 servings

1 lb Shiitake mushrooms, cleaned
& sliced
6 tbsp Olive oil
1 ea Garlic clove, minced
1/2 tsp Hot red pepper flakes
Salt & pepper, to taste
2 tbsp Parsley, chopped
3/4 lb Linguine

Cook mushrooms in olive oil over low heat for 10 minutes. Add garlic, red pepper flakes, salt & pepper. Cook, stirring for 5 minutes over low heat. Cover and cook for 15 minutes longer. Add parsley and mix. Meanwhile, bring water to boil in large kettle. Boil linguine until aldente. Drain linguine, add sauce and mix. Sprinkle with extra parsley.
