Spinach Polenta Topping

Instructions:

Yield: 6 servings

2 tbsp Raisins
1 ea Garlic clove, quartered
1/4 cup Olive oil
2 tbsp Pine nuts
20 oz Fresh spinach, washed, dried & chopped

Soak raisins in hot water until they are plump, about 5 minutes. Drain & set aside.

Saute garlic in oil over mdium-low heat until garlic begins to brown, about 5 minutes. Remove garlicx & discard, reserve flavoured oil.

Add raisins & pine nuts & saute until the nuts are golden, 3 minutes. Add spinach & continue to saute until the spinach has softened, about 5 minutes. Spread over polenta & serve.
