2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/4 cup finely chopped crystallized ginger
1/2 cup vegetable oil
1/2 cup mild-flavored (light) molasses
1/2 cup dark brown sugar, packed
1 large egg
1 1/2 teaspoons grated lemon peel
1/2 cup boiling water

To Finish
Powdered sugar

*Italian cream cheese available at Italian markets and many supermarkets. If you can't find mascarpone, top this with honey-sweetened sour cream.
