Instructions:

Morning Glory Muffins

I am lost if I don't have one with my morning coffee!

2 cups flour
1 tablespoon baking powder
1 tablespoon cinnamon
1/4 heaping teaspoon each of cloves, ginger, nutmeg, mace and salt
1 cup dark brown sugar
3/4 cup granulated sugar

Mix these ingredients together. Add:

1 cup coconut
2 cups shredded carrots
1/2 cup raisins
1 chopped apple
1/2 cup chopped pecans

Beat 3 eggs with 1 cup oil and 1 tablespoon vanilla extract.

Add the egg mixture to the dry ingredients.

This recipe makes 12 muffins using the oversized tins or 24 smaller ones bake in a 375 degree F oven for about 30 to 45 minutes.
